La famille

J'ai passé quelques jours chez mes parents la semaine dernière.  C'est un plaisir que je me offre et que je planifie continuer de m'offrir régulièrement.

Nous avons fêté l'anniversaire de ma soeur Catherine au restaurant Europea à Montréal.  Le midi il y a le menu La table gourmande de Jérôme Ferrer qui inclut la mise en bouche, une entrée au choix, deux plats au choix et un choix de verrines gourmandes du chef patissier Roland del Monte.    Catherine a choisi comme entrée une Escalope de foie gras saisie et cuite à l'étouffée aux écorces de bois d'érable, puis posée sur un galet de rivière pour caraméliser avec un vin de glace.  Dramatique comme plat et selon elle, excellent!  Il y avait aussi au menu un macaroni à la crème de champignon, un tartare de bison, une salade de gésiers de canard et d'autres mets très intéressants.  Nous avons eu un lunch très agréable, et un excellent service!  Je planifie y retourner bientôt avec mon conjoint Jean-Claude!

Bavette de boeuf angus grillée

Plus tard dans la semaine mon père Jean nous a fait un spaghetti carbonnara, qu'il a préparé d'une description dans un roman qu'il a lu, The Hunt Club de John Lescroart.  

“While the bacon cooked and the water boiled, she showed him arouind….Placing the cooked bacon on paper towels to drain…some large pinches of salt went into the water pot….he watched  her stir the spaghetti…she pulled a strand from the water “You know this?” and tossed it against the wall, where it stuck.  “That’s the test, you know.  It’s al dente when it sticks in the wall, “  She turned the flame up under the bacon fat…he watched her take the large pot of boiling water and pasta and pour some of the water into a huge glass bowl, then dump the remainder of the pot into the colander in the sink.  He watched her lift the bowl filled with heated water and pour it off over the spaghetti in the colander.  And then – so quickly he couldn’t believe it wasn’t burning her hands – she poured the drained spaghetti back into the heated bowl.  All of it was fluid, with no wasted motion.  But fast.  She crunched the bacon over the spaghetti.  She turned back to the stove, stopped for just a second, grabbing the bacon pan, to smile at him.  “Twenty more seconds, you’r going tomlove it.”  Next he watched her crack two raw eggs over the spaghetti in the large bowl, then pour all the hot bacon grease over it.  She held a wooden fork in one hand, a wooden spoon in the other, and she began to toss the eggs and bacon fat into the pasta until it was well mixed..  she then covered the spaghetti with grated parmesan cheese like a fresh dusting of snow.  She then turn the pepper mill a dozen times over the dish.  She tossed the pasta one last time before lifting a perfect serving and placing it in the center of his plain white bowl.”

 Un délicieux spaghetti, que j'ai préparé pour mon Jean-Claude hier soir... et qu'il a aussi adoré!


Dimanche j'ai eu le plaisir d'avoir un excellent brunch, entouré de ma famille complète, mes parents, ma soeur Catherine, mon frère Jean-Richard et sa conjointe Michèle, Jean-Claude et mon cher fils Sébastien. Quelle belle façon de commencer la semaine!  Merci à vous tous!
